Gelato isn’t just dessert—it’s a little moment of joy, made with real ingredients and a lot of love. For us at Talenti, it’s all about honoring the gelato-making process to create something truly authentic. Our founder, Josh Hochschuler, discovered the art of traditional gelato while living in Buenos Aires, where Argentinian gelaterias put their own spin on Italy’s creamy, long-standing dessert. Inspired by that blend of tradition and creativity, we’ve made it our mission to share the secrets of authentic gelato with every jar we craft.
What Makes Gelato Different from Ice Cream?
Texture
When it comes to texture, gelato and ice cream are like two different worlds. Gelato is churned more slowly than ice cream, which means less air goes into it. That’s what gives it that dense, creamy consistency and smooth, melt-in-your-mouth texture. Ice cream, on the other hand, is churned at a higher speed, incorporating more air and resulting in a lighter, fluffier texture compared to gelato.
Fat content
Gelato typically contains less fat than ice cream. While ice cream is made with heavy cream, gelato uses more milk and less cream. Talenti embraces this difference by using the finest milk and cream to create a balanced texture that feels indulgent without being too heavy.
Serving temperature
Gelato is served a bit warmer than ice cream, usually between 10°F and 22°F. That’s around 8°F warmer than ice cream, which is typically kept at a frosty 6°F to 10°F. This slightly warmer serving temperature lets gelato’s creamy texture shine and makes its rich flavors even more vibrant and noticeable.

The Art of Talenti’s Gelato-Making Process
We believe gelato-making is an art—a delicate blend of tradition, passion, and innovation. Every step of our gelato-making process, from sourcing the finest ingredients to crafting the creamiest texture, is designed to create a dessert that’s truly unforgettable. Let’s explore what makes Talenti’s authentic gelato so special.

Sourcing the finest ingredients
Great gelato begins with extraordinary ingredients. That’s why we search the world to find the very best. For example, our vanilla beans hail from Madagascar, where the perfect climate produces beans with unmatched depth and aroma—that’s what makes our Madagascan Vanilla Bean Gelato so delicious. Similarly, tender coconuts from the Philippines lend their creamy texture and subtle sweetness to our Caribbean Coconut Gelato.

Slow-cooked batches for a velvety texture
Authentic gelato is as much about the process as the ingredients. We slow-cook every batch in small quantities using the Bain-Marie technique, gently heating our fresh milk and other ingredients. This method allows the flavors to simmer, deepen, and fully develop while achieving the signature velvety texture that makes gelato so special. It’s a labor of love, but the result is worth every minute.
No shortcuts
In a fast-paced world, we take pride in slowing down. Our gelato is made using the time-honored Italian gelato-making process, a tradition perfected over centuries. From carefully selecting ingredients to meticulous preparation, every step is done with intention and care.

FAQs
While Talenti is inspired by Italian gelato and uses traditional techniques, it’s crafted in the United States. However, our commitment to authenticity ensures that it’s as close to real Italian gelato as you can get outside of Italy.
Gelato differs from ice cream in texture, fat content, and serving temperature. Gelato is denser, contains less fat, and is served at a slightly warmer temperature, which enhances its creamy texture and flavor.
